2/1: 1N unless we've agreed weak jumps.
Acol: 2♣ followed by 3♣ is an alternative to 1N.

1D-1H* as either natural 5+Hs or 'any invite type' hand.
She also plays 4 card majors and a 1C* forcing with canapé style bidding.

2/1 It's that ubiquitous 1NT response (uuurgh!) except if you have agreed 3♣ as 8-11 and 6+ carder
SAYC I'll bid 2♣ even though it should show 10+
Acol I'll bid 2♣ as it is 8+
Precision Club I can pass as I know partner has less than 16, but it doesn't make it right.
As the late Rixi Markus, a formidable British woman player, said "Bid what's in your hand". If you can't show that you have a 7 card ♣ suit with 3 of the 5 top honours and an outside king naturally the system that you are playing is a bit lopsided, in my opinion.
Note: some 2/1 players do not play 1♦ - 2♣ sequence as game forcing.

I admit I'm not a fan of the 1NT response in 2/1 (as you probably realise), and SAYC is more conservative as a 1NT response shows a 6-9 count.
However, in SAYC, as there isn't a game force in place if you bid 2♣ then I believe it is better to tweak the system a little and bid it with a 7 card suit and 7 HCPs, that is, if you don't play 1♦ - 3♣ as showing this type of hand.

1D-1NT = Game forcing, asks about shape and strength.
1D-2C = Non-forcing with 5+ clubs (would be a good choice with the posted hand).
Another treatment is to use 1D-1NT as a transfer to clubs.
If playing that 1D can be balanced, and even a three card suit, I think you need a natural non-forcing 1NT response though.
