There are turnaments that show as unclocked then you join and find stuck on a silly tournament having to wait 5 minutes after each round, why is this happening?

Are you sure they are clocked?

In a unclocked tourney you have the "fast track" which ends early, but if you fall behind you will be matched with slow pairs, and if you are fast then, you'll be waiting for future opps to finish they round, and that may take some time.

Yes, I am pretty sure, some directors list their tournaments as unclocked and then there is a round clock and we never change.

Can you tell us a specific tourney where this happened? We can check our logs to see what happened.

My guess is they changed the tourney settings after you signed up.
